Place all ingredients into the bowl of a blender or food processor and process until smooth. Serve over cubed just-grilled chicken breast which has been arranged over crisp lettuce sprinkled with crumbled Feta cheese.

  • 1/3 cup extra virgin olive oil
  • 3-4 tablespoons balsamic vinegar
  • 1 tablespoon fresh basil, chopped
  • 1/2 teaspoon fresh oregano, or 1/4 teaspoon dry

  • 3 garlic cloves, finely minced
  • 2 tablespoons pitted black oil cure olive, chopped

Allow the minced garlic to stand in the vinegar for 10-15 minutes before preparing recipe. This will help remove the "bite" from the garlic and mellow it.

Meanwhile, slice tomatoes into wedges. Drain mozzarella balls (they are normally packaged in a brine). Remove pits from black olives and coarsely chop. Set these ingredients aside in a salad bowl.

Combine vinaigrette ingredients in a cruet or in a blender with the garlic and vinegar from above. Use 4 tablespoons vinegar if you like a tangy salad (3 tablespoons if you don't). You can use all balsamic vinegar, or if you prefer a milder dressing, use half balsamic and half red wine or Chianti vinegar. No mincing or chopping is required if a blender is used - pulse briefly.

Pour vinaigrette over tomatoes, cheese and olives; stir to coat. Do not add too much dressing - just enough.

Can be served with peeled, sliced cucumbers (1/4" coins or 1/2" cubes), if desired.

Season to taste with freshly grated black pepper (and salt, if needed) and serve, optionally, on a bed of radicchio or escarole hearts.

Simmer the chicken in water (or chicken broth if you have it - then reserve for making soup later on. Do not allow the water or broth to boil.

Meanwhile, remove the strings from the celery and dice it into 1/3 inch dice. Wash and chop the cilantro. Peel and dice or mince the onion and garlic.

Stir the curry powder, onion, and garlic into the mayonnaise, mixing well.

Remove the chicken from the pan using a slotted spoon. Dice into bite sized chunks. Add to the mayonnaise. Mix well.

Arrange a few perfect lettuce leaves in the center of a salad dish. Scoop the chicken mixture onto the center. Garnish with a sprinkle of paprika (we like to use either the Hungarian or smoked paprika) and top with a sprig of cilantro.Serves 3 or 4.

  • 1 teaspoon mustard
  • 1/2 teaspoon celery seed

  • 3 egg yolks
  • 1 cup chicken stock
  • ½ teaspoon salt

  • ½ cup finely minced celery
  • 1 envelope unflavored gelatin
  • 1 cup heavy cream

In the top of a double boiler, beat egg yolks over hot but not boiling water.

In a saucepan, simmer chicken breast in chicken stock with minced garlic and celery until chicken is cooked. Remove from heat and allow to cool slightly. Season with salt, paprika, and pepper sauce. Cut chicken into ½ to ¼ inch pieces.

Slowly add hot chicken stock (not boiling) to eggs, whisking constantly. Stir until slightly thickened.

Soak gelatin in ¼ cup water for 5 minutes; microwave until heated (about 60 seconds), then stir until dissolved. Stir gelatin into chicken mixture.

Whip cream until stiff; fold into chicken mixture.

Have ready a ring mold dipped in cold water; tap out excess water, but do not dry. Transfer mixture into ring mold and refrigerate overnight.

To unmold, run a knife along the edge of the mold. Dip mold for a few seconds in hot water and invert onto serving plate, optionally lined with a bed of lettuce.

Decorate around the mold with wedges of ripe cherry tomatoes for a nice color contrast. Fill the center of the mold with cooked fresh green peas and cubed new potatoes, or optionally with potato salad.

  • 1 1/2 cups olive oil
  • 2-3 (or more) cloves garlic, pressed
  • 3/4 cup red wine vinegar

Combine ingredients for salad dressing. Slice vinegar peppers into strips. Slice onions into thin rings.

Scrub potatoes and remove eyes. Do not peel.

Steam or boil gently in their jackets until nearly tender. Remove from heat and drain. Cover and let sit 10 minutes to finish cooking.

Cut potatoes into bite sized pieces and set aside in a serving bowl.

In the same pan, bring remaining ingredients to a boil, then remove from heat. Allow to cool several minutes and add cooked potatoes (they should still be hot).

Allow potatoes to marinate for 10 minutes, then remove with a slotted spoon.

Season to taste with salt and pepper.

Save remaining dressing to use as a marinade for chicken or beef.

For a different taste, add 1/4 teaspoon rubbed sage and chopped rosemary or summer savory.

Up to 1/4 cup of the red wine vinegar can be substituted with either balsamic or tarragon vinegar.

Serve warm or cold.
